Last night my hands were completely full as I carried my backpack, tool kit, shoes, banana cream tart and gingersnaps to my car. Both the banana cream tart and the gingersnaps were started on Day 2. We actually made the dough for the tart on Day 1 and prepared the ring on Day 2. We also made the creme pastissiere (pastry cream) and gingersnap dough on Day 2. Last night, we rolled out the gingersnaps and baked them; whisked the pastry cream with whipped cream, bananas and rum; blind baked the tart shell; added the banana cream mixture to the tart shell; whipped the whipped cream; and piped the whipped cream in "rosettes" for finishing. It doesn't seem like too much for a full two days, but really it was only 2 half-days as we are currently going through ServSafe training which takes up the first 2 1/2 hours of class time.
I am sorry about the photo quality. The only camera available was my iPhone and for some reason it didn't take the best pictures last night.
